Don't use too much tea -- Let it swirl!

A customer emailed to say that she found that putting too much tea in her tea strainer actually resulted in a weaker infusion, not a stronger one. That's because the tea was so tightly packed after absorbing water that the leaves couldn't swirl around in the hot water. So, when using an over-the-cup strainer, or a tea ball, be sure not to put in too much tea. Make sure the tea leaves have room to swirl around!
